Cold Holding

Cut tomatoes 48F Ham 50F Rice 91F / Provide proper cold holding temperatures of 41F or below at all times. Discussed cooling food down after prepping it before wrapping up. Also discussed keeping less food in stainless steel containers as the reach in is very close to the grill and the area is warm.

Why This Matters

THE DANGER ZONE KILLS: Between 41°F-135°F bacteria double every 20 minutes. At 70°F, 10 bacteria become 10,000 in 2 hours, 10 million in 4 hours.
