Establishment is cooking El Pastor (pork) on a vertical broiler shaving cooked product off. Remainder of raw meat cone is removed from cooker after lunch service and placed in walkin cooler it is then returned to vertical broiler for dinner service. Discontinue. Vertical cooking of meat on vertical Rotisserie is not a process that is viable for a non continous cooking of animal foods procedure.
