Kitchen is currently out of operation due to a scheduled water heater replacement. PIC emailed to let me know that the tank needed replacement after operational hours last night. The kitchen will remain out of service until the water reads a temperature of 100F at the hand sink. PIC will send a picture of the water temperature before resuming any prep.
