Food Protection

A container of vegetables was observed on the edge of the fish tank. The vegetables were moved. Ownership and management was instructed to avoid this practice. One box of vegetables had been placed directly on the basement floor by the delivery person. BISD advised the ownership to promptly move the vegetables to the shelving after delivery.

Improper Maintenance of Floors

Cardboard was observed on the floor in front of the fryer. It appears that the fryer had been over-filled. This action resulted in the floor in front of the fryer being slippery. Management should make certain that the fryer is not overfilled so that it doesn't produce a floor hazard in the future.

Why This Matters

CONTAMINATION RESERVOIR: Damaged floors harbor bacteria in cracks. Standing water breeds Listeria, Pseudomonas. Broken tiles create pest harborage. Floor contamination spreads via shoes, equipment wheels, and dropped items. CDC found floor drains positive for Listeria in 40% of retail delis.

Code Requirements

Floors must be: Smooth and non-porous in food areas; Properly sloped to drains (1/8 to 1/4 inch per foot); Coving at wall junctures sealed; No cracks, holes, or missing tiles; Grout intact and sealed; Cleaned daily or more frequently; Dry except when cleaning.
