Observed employee scrubing with hand at rinse bay then washing /sanitizing at three bay sink. Soiled dishes stored in rinse bay while wash and rinse bay are set up. Set up properly the three bay sink wash/rinse/sanitize properly. Ensure that soiled dishes are stored separated in rack/box.
