Observed employee using gloved hands to place raw meats on grill and then use the same gloved hand to remove cooked meats. Employees must be retrained in food safety and cross contamination Emploee removed gloves washed his hands and put on new gloves. Seperate tongs were provided to him to use one with the raw meat and another to remove the cooked product.
Why This Matters
FALSE SECURITY: Contaminated gloves spread bacteria MORE than bare hands because workers feel 'protected'. Gloves pick up 5x more bacteria than skin. Not changing between tasks spreads contamination to everything touched.

Change gloves: After touching raw meat/poultry/fish, Between different food types, After touching face/hair/clothing, Every hour maximum, When switching tasks, After touching any non-food surface. Wash hands BEFORE putting on new gloves.

Cooling (P)
Numerous containers of products cooked just prior the the inspection and during the inspection are placed in plastic bus buckets filled to the top and covered in plastic. Reviewed proper cooling procedures with the PIC and products were moved to shallow metal pans to properly cool. Product temperatures ranged from 100F- 135F.
Why This Matters
TOXIN FORMATION: Clostridium perfringens spores survive cooking and germinate during slow cooling. Produce toxin that causes violent illness. Responsible for 1 million illnesses annually. Large batches can take 24+ hours to cool unsafely.
Code Requirements
Cool rapidly using: Shallow pans (2 inches max), Ice baths with stirring, Blast chiller, Cut large items into portions, Add ice as ingredient. NEVER cool at room temp. NEVER stack hot containers. Monitor with thermometer. Document cooling times.

Excessive amounts of raw products and cooked products including raw meats cooked noodles and tofu on counters throughout the kitchen at temperatures of 55F and above. Per the PIC products were in the process of being cooked or to be put in refrigeration. Reviewed the procedures with the PIC and foods that were not currently being cooked were placed in refrigeration. Packaged products on service line in service area stored above the cold hold unit including rice products witha temperature above 60F. PIC voluntarily discarded the products at the time of the inspection.
Why This Matters
RAPID BACTERIAL GROWTH: At 50°F, E. coli doubles every 30 minutes. At 70°F, it doubles every 20 minutes. After 4 hours above 41°F, bacteria can reach dangerous levels causing severe illness. Common result: 24-72 hours of diarrhea, vomiting, fever, potential hospitalization.
Code Requirements
Immediately discard foods held above 41°F for over 4 hours. Rapidly cool foods above 41°F if less than 2 hours. Check ALL cooler temps every 2 hours with calibrated thermometer. Repair/adjust refrigeration immediately. Never store food in non-refrigerated areas.
