Wiping Cloths Clean Sanitize
Soiled wiping cloths should be maintained within the sanitizing buckets when not in use. Cloths were observed outside of solution within the sushi and food preparation areas. The wiping cloths were properly stored and the GM reviewed procedures with the staff.

Premises Maintained
Two buckets were observed within the mop sink. The mop sink was clean. However the sink should be maintained free from unnecessary equipment. The articles were removed and the GM reviewed procedures with the staff.
