The veal stock that was cooked overnight and strained this morning was inadequately chilled belong placing it within the walk in refrigerator. Ideally the stock should be chilled well below 90 F before it is placed into a Lexan container. Atthe time of the inspection the Stock was at 92 F. The stock was removed and chilled further in an ice bath to meet proper cooling requirements.
