Wiping Cloths Clean Sanitize

Two cloths were observed on one of the food preparation tables. The grill cook explained that one had been utilized to handle a hot pan. The second was placed into the sanitizing solution.

Non-Food Contact Surfaces Clean

Small areas of food soil were observed on the exterior of the basement freezer door and the shelving below one of the food preparation tables. The food preparation table was in use. The PIC instructed the staff to clean the two locations. One staff member had cleaned both before the inspection was completed. In addition to the two areas referenced above a limited quantity of grease was observed on one of the grease traps that had been recently cleaned. Staff were cleaning the exterior of the grease trap during the completion of the inspection.

Why This Matters

INDIRECT CONTAMINATION: Dirty surfaces attract pests, harbor bacteria, and contaminate via contact or air movement. Dust from dirty shelves contains allergens affecting 32 million Americans. Grease accumulation creates slip hazards causing 25% of restaurant injuries.

Non-food contact surfaces must be cleaned at frequency to prevent: Soil accumulation; Pest attraction; Contamination of food/food contact surfaces. Includes: Equipment exteriors; Shelving; Walls and ceilings; Light fixtures; Ventilation systems.

Improper Maintenance of Floors

During exterior building construction the MBTA caused a pipe along the building foundation to rupture. A small quantity of water had ponded in an unused portion of the vinyl tiled basement. The vinyl tile had been removed and the MBTA was in the process of refinishing the basement floor. Whereas the basement is utilized for storage only and the MBTA could not confirm a completion date this violation will be filed for later review (2014).

Why This Matters

CONTAMINATION RESERVOIR: Damaged floors harbor bacteria in cracks. Standing water breeds Listeria, Pseudomonas. Broken tiles create pest harborage. Floor contamination spreads via shoes, equipment wheels, and dropped items. CDC found floor drains positive for Listeria in 40% of retail delis.

Code Requirements

Floors must be: Smooth and non-porous in food areas; Properly sloped to drains (1/8 to 1/4 inch per foot); Coving at wall junctures sealed; No cracks, holes, or missing tiles; Grout intact and sealed; Cleaned daily or more frequently; Dry except when cleaning.

Corrective Actions

Schedule floor repairs within 30 days; Seal all cracks immediately with approved sealant; Improve drainage to eliminate standing water; Increase cleaning frequency; Replace missing tiles; Re-grout as needed; Remove any carpeting from food areas
