Mechanical Warewashing Equipment Hot Water Sanitization Temperatures (Pf)
The main dishwasher was not getting above 156F but was 161F at the plate. Please have the gauge repaired. Dishwasher at the bar was 178F at the plate but the rinse did not get above 167F 10-23-24 Dishwasher in kitchen and bar are above 160F at the plate but PIC is waiting on parts to fix the gauges.

Immediate correction required. Follow health code section 105 CMR 590.004. Implement proper temperature control procedures. Train all staff. Document corrective actions taken.
