Observed chicken and other meats being stored in the flip top refrigeration unit the containers were over filled and the meats/chicken temperature was 52F. The staff member removed all the meat/chicken and placed back into the walk in refrigeration unit.
Why This Matters
RAPID BACTERIAL GROWTH: At 50°F, E. coli doubles every 30 minutes. At 70°F, it doubles every 20 minutes. After 4 hours above 41°F, bacteria can reach dangerous levels causing severe illness. Common result: 24-72 hours of diarrhea, vomiting, fever, potential hospitalization.
Code Requirements
Immediately discard foods held above 41°F for over 4 hours. Rapidly cool foods above 41°F if less than 2 hours. Check ALL cooler temps every 2 hours with calibrated thermometer. Repair/adjust refrigeration immediately. Never store food in non-refrigerated areas.

Dishmachine behind the bar and the dishmachine in the warewash area not working. Repair both machine and provide invoice. PIC was able to provide a receipt for the bar dishmachine. Waiting on part. PIC stated they came in a repaired the dish machine is the warewash area. The gauge is still reading 110 after running it a few times. Repair and make sure the detergent and Sanitizer are primed. Ensure the person repairing the dish machine shows the staff and PIC how it works. Observed the AC unit over the dishmachine is still dripping water. Contact the licensed company to repair the AC unit. Observed the freezer door still not closing properly and observed the 2 fans inside the freezer not working. Contact licensed company to repair the door and the condensor for the frost build up.

Observed exterior in the back with no door sweep. Provide proper door sweep on exterior doors. PIC had a new licensed exterminator come out and was able to provide the documents. The inspection is schuduled for Sept 10th.
