Non-Food Contact Surfaces
During the inspection internal and external thermometers to the walk-in refrigerator were observed to read 52 degrees F. Product within the walk-in read 48 to 50 degrees F. The unit is reported by the Chef to have been operating properly prior to noon. PHFs were removed from the unit. The adjoining freezer door was opened to drop the internal temperature of the refrigeration to 41 degrees F. The freezer was observed to be maintaining frozen products frozen. A service call had been made to the engineering department. The unit was to be repaired within the hour.
