Dishwashng Facilities
The dish machine was turned on but not operated without the booster. The wash temperature ranging between 156 F and 162 F was not adequate to provide the proper final plate temperature. When the dish machine is first turned on the staff should turn the booster on in the basement.

Clean Equipment & Utensils Storage
Two cutting boards were stored on a clean floor within the kitchen. The edge of one side of each cutting board was in contact with the floor. The cutting boards were cleaned and stored on shelving.
