At the hand sink in the service area paper towels are stored bunched together in an 1/8th pan at the hand sink. Provide a paper towel dispenser for dispensing the paper towels. At the hand sink at the far end of the service counter the paper towel dispenser is empty. Provide paper towels for the hand sink. Employees will wash hands at the other hand sink on the service line until the paper towel dispenser is filled with paper towels.

Floors must be: Smooth and non-porous in food areas; Properly sloped to drains (1/8 to 1/4 inch per foot); Coving at wall junctures sealed; No cracks, holes, or missing tiles; Grout intact and sealed; Cleaned daily or more frequently; Dry except when cleaning.
