(B) Cooling Methods (C)
They are cooling black beans (184F) at room temperture and the chef says that they leave them out for a few hours then put them in the walk-in. Provide proper cooling methods to be sure items cool properly form 135F to 70F in two hours and then from 70F to 41F in an additional four hours. (The chef has an ice wand and after talking with him they are going to use the ice wand and break the beans into smaller containers to cool)
