There are commercially cooked meatballs reheating on the steam table that are only 99F. Properly reheat items for hot holding then hold them on the steam table. (the owner moved reheated all the items on the grill and will move to the steam table when it's the proper temperature)

Sanitizers Criteria-Chemicals (P)
The sanitizer bottles have over 400 ppm quats and the spec on the bottle is for it to be 200 ppm. Provide proper santizer levels. (The owner corrected to the sanitizer concentration)
