Chicken x2 at 49F-52F in 3door prep refridge under toaster oven.Chicken in cold line at 46F.Fruit cup at 48F.The majority of product tested was at 38F-40F(Good).Please look into equipment and staff practices.Please utilize the HACCP approach and temp product at each step of the process.This is the only way you can positively know if Control measures are met.
Why This Matters
THE DANGER ZONE KILLS: Between 41°F-135°F bacteria double every 20 minutes. At 70°F, 10 bacteria become 10,000 in 2 hours, 10 million in 4 hours. Staphylococcus aureus produces heat-stable toxins that cooking cannot destroy. Clostridium perfringens causes 1 million illnesses yearly from temperature abuse. Listeria grows even under refrigeration, killing 20% of victims including pregnant women and newborns.
Code Requirements
ALL TCS foods MUST be held at 41°F or below at ALL times. This includes: All meat, poultry, seafood; Dairy products; Cut melons, tomatoes, leafy greens; Cooked rice, pasta, potatoes; Tofu, soy products; Sprouts; Garlic in oil. Check temperatures every 2 hours (4 hours maximum). If above 41°F for less than 2 hours, rapidly cool. If above 41°F for 2-4 hours, use immediately. If above 41°F for over 4 hours, DISCARD.

Evidence of lessor flies throughout.Extermination reports mentioned loose grout but no mention on subsequent report whether issue was remedied and reports are inconsistent with mention of sanitation(1 of 4 reports looked at mentioned sanitation and that report stated sanitation was fair)>Issue with lessor type flies is 100% a sanitation issue and having sanitation fair will not remedy situation no matter how much service you get.Attention to detail with regards to cleaning and sanitation as well as repairs to loose tiles anf grout and eliminating sources of food and water are the only way to rid establishment.Please cover waste receptacles when not in use.There is a need to treat adult flies on walls and equipment.Provide.

Floors must be: Smooth and non-porous in food areas; Properly sloped to drains (1/8 to 1/4 inch per foot); Coving at wall junctures sealed; No cracks, holes, or missing tiles; Grout intact and sealed; Cleaned daily or more frequently; Dry except when cleaning.
