Burger cooked in CVap for 20 minutes registered 136F as final temperature. Burgers must be fully cook until all other cooking procedures with CVap are reviewed and approved by the health department.

Observed burger patties cooking at 115F. PIC states that they are cooked at CVAP at 130F for two hours and then they are either fully cooked at steam injected convection and later on flat grill or directly on flat grill. At this time patty temperature registered 115F and according to PIC they had been in oven for 2 hours. Provide proper cooking temperatures or proper specification and procedures approved by Health Department. Burgers must be fully cooked until above conditioned are satisfied.
