PIC will have to have a professional cleaning company clean product in back storage area (drinks only) and in retail area of any debris. Damage was contained to back hall. Retail had mostly a bad smoke smell. PIC will voluntary discard thre boxes of chips and one container of flour. Clean and sanitize all shelves in retail area.

Improper Maintenance of Floors
Flooring in the back room will need to be cleaned Replace any tiles that were damaged from the fire.
Why This Matters
CONTAMINATION RESERVOIR: Damaged floors harbor bacteria in cracks. Standing water breeds Listeria, Pseudomonas. Broken tiles create pest harborage. Floor contamination spreads via shoes, equipment wheels, and dropped items. CDC found floor drains positive for Listeria in 40% of retail delis.
Code Requirements
Floors must be: Smooth and non-porous in food areas; Properly sloped to drains (1/8 to 1/4 inch per foot); Coving at wall junctures sealed; No cracks, holes, or missing tiles; Grout intact and sealed; Cleaned daily or more frequently; Dry except when cleaning.

PIC will need to make repairs to back and front door. Back door is missing and that exit is boarded up. Building will be notified. Front door the glass will need to be replaced. Walls and ceiling around door in back hallway will need to be replace from water damage. All other walls will need to be inspected cleaned or replace.

OVERHEAD CONTAMINATION: Peeling paint and debris fall into food. Condensation on ceilings drips bacteria onto prep surfaces. Studies found ceiling tiles harbor Bacillus cereus spores. Restaurant ceiling collapse contaminated food service for 200 guests.

Walls/ceilings must be: Smooth and washable in food areas; Light-colored for easy soil detection; Free of holes, cracks, peeling paint; Sealed at all joints and attachments; Clean and free of grease, dust, cobwebs; Non-absorbent in areas subject to moisture.
