Insects Rodents Animals
PIC will have to address rodent issue with Pest control. Pest control inspects two or three times a month. I reviewed reports and PIC will have to address what pest control suggest to do to help. Pest control has glue traps under shelves and traps in back room. Pest control also stated staff needs to clean and address areas between inspections. It may help if PIC removes kick plates on bottom shelves to help with cleaning and monitoring also store back stock in containers that it is shipped in. Pest control should be inspecting more often until issue is no longer an issue. Pest provide up to date reports at reinspection. Shelves in back room need to be pulled off the wall so pest control can bait and nspect.

DISEASE VECTORS: Mice produce 50-75 droppings daily containing Salmonella, Hantavirus. Cockroaches carry 33 types of bacteria, 6 parasitic worms. Flies regurgitate and defecate on food, spreading E. coli, Shigella. One mouse can contaminate 10 times more food than it eats. Pest allergens trigger asthma in 26% of inner-city children.

PIC will need to remove all items from retail shelves and clean and sanitize shelves. All shelves in back room will need to be cleaned and sanitized also. All damaged food need to be removed. Monitor daily. Wire shelves in walk in visibly soiled. Clean to remove.

PIC will need to clean the floor under shelves in retail area. Visibly soiled. By removing kick plates will help with cleanng and monitoring. Floor in walk in needs to be cleaned. Visibly soiled. Floor in back room will need to be cleaned. Visibly soiled with old droppings and food left from mice.

CONTAMINATION RESERVOIR: Damaged floors harbor bacteria in cracks. Standing water breeds Listeria, Pseudomonas. Broken tiles create pest harborage. Floor contamination spreads via shoes, equipment wheels, and dropped items. CDC found floor drains positive for Listeria in 40% of retail delis.

Floors must be: Smooth and non-porous in food areas; Properly sloped to drains (1/8 to 1/4 inch per foot); Coving at wall junctures sealed; No cracks, holes, or missing tiles; Grout intact and sealed; Cleaned daily or more frequently; Dry except when cleaning.
