Non-Food Contact Surfaces Clean
Two of the ice wells that were not in use during the inspection exhibited small amounts of food debris or mold (beneath the cold plate). The staff cleaned the ice wells during the inspection. A third ice well located adjacent to the rear dish machine had mold within it. The manager stated that the former ice well is no longer utilized for the storage of ice and that it is simply a stand for the glass racks to set upon. The unit should be cleaned to eliminate a potential source of water for drain flies.
Why This Matters
INDIRECT CONTAMINATION: Dirty surfaces attract pests, harbor bacteria, and contaminate via contact or air movement. Dust from dirty shelves contains allergens affecting 32 million Americans. Grease accumulation creates slip hazards causing 25% of restaurant injuries.
