Power is off to the establishment from resulting fire. Manager calling for possible dry ice to maintain product temperature. If power is off for an extended time a condemnation could be required.PIC would need to contact the Health department(617-635-5326) to discuss with a supervisor
Why This Matters
RAPID BACTERIAL GROWTH: At 50°F, E. coli doubles every 30 minutes. At 70°F, it doubles every 20 minutes. After 4 hours above 41°F, bacteria can reach dangerous levels causing severe illness. Common result: 24-72 hours of diarrhea, vomiting, fever, potential hospitalization.
Code Requirements
Immediately discard foods held above 41°F for over 4 hours. Rapidly cool foods above 41°F if less than 2 hours. Check ALL cooler temps every 2 hours with calibrated thermometer. Repair/adjust refrigeration immediately. Never store food in non-refrigerated areas.

Small grease fire behind the fryer station.No smoke odors soot or fire damage observed.exposed food items were disposed prior to my arrival discussed with the PIC to denature items. Establishment voluntarily closed and will remain closed until all cleaning & repairs are completed(per plumbing & Electrical inspectors requirements) Manager instructed to contact the Mayors hot line when ready for re-inspection.
