The carmelized onions made earlier in the morning are stored on top of the sandwich unit to cool they are 70F but other items in the unit are below 41F. Provide proper cooling methods to be sure that items cool down properly from 135F to 70F in two hours and then from 70F to 41F in four hours.

They have recenlty done some renovations and have an enclosed room to prepare the dough. The enclosed room does not have a handwash sink and the sink just outside the dough room is blocked with dry goods. Provide access to the handwash sink (there are no employees working in the area at this time.
