Cream cheese pc's ranged from 42F up to 50F in upper portion of flip top refridge.The pc's that were piled up high-over the lip of container were the higher temperatures.Store accordingly.

Why This Matters

THE DANGER ZONE KILLS: Between 41°F-135°F bacteria double every 20 minutes. At 70°F, 10 bacteria become 10,000 in 2 hours, 10 million in 4 hours. Staphylococcus aureus produces heat-stable toxins that cooking cannot destroy. Clostridium perfringens causes 1 million illnesses yearly from temperature abuse. Listeria grows even under refrigeration, killing 20% of victims including pregnant women and newborns.

2dozen drain fly insects observed on walls in DR front counter menu board and back warewashing and mop sink area.Previous extermination report states drains need to be cleaned.No further documentation to suppo0rt it has been completed satisfactory.This type issue is primarily a sanitation issue.Furthermore Establishment needs to provide proper food protection to product exposed behind front counter.Establishment needs to think about how program is working and whether they need to fog.
