The single door milk/dairy refrigerator within the coffee preparation area was operating at 45 F at the start of the inspection. The thermostat was adjusted during the inspection to lower the temperature. Whereas the inspection was completed immediately following a long rush management suspects that frequent access to the unit during the rush resulted in the elevated temperature.

Improper Maintenance of Floors

Clean to remove the spilled milk/dairy product in the right rear of the refrigerated walk-in. The spill is located beneath one of the storage racks. Management stated that the spill would be cleaned today.

Why This Matters

CONTAMINATION RESERVOIR: Damaged floors harbor bacteria in cracks. Standing water breeds Listeria, Pseudomonas. Broken tiles create pest harborage. Floor contamination spreads via shoes, equipment wheels, and dropped items. CDC found floor drains positive for Listeria in 40% of retail delis.
