Inadequate Facilities/Cooling Methods
Provide operating temperatures of 41 or below at all times to hold product at 41 or below at all times. Unit bottom was unloaded and all product returned to walk in refrigerator top prep shelf was placed on ice and product temperature reduction was noted. Remove all product from service at the end of meal service. New unit is ordered and will be placed into service as soon as it available.
