At the start of the inspection the rear hand sink was filled with plastic covers. The PIC had placed them in the sink basin while cleaning and setting the store up for service. The covers were removed. BISD discussed the hazards associated with this storage and the importance of frequent hand washing.

FORCED NON-COMPLIANCE: Blocked sinks force employees to skip handwashing. Studies show 89% compliance when sinks accessible vs 35% when blocked. Each skipped handwash potentially contaminates multiple food items. Inaccessible sinks contributed to Hepatitis A outbreak affecting 660 people.

Clean to remove the orange juice spill within the two-door undercounter refrigerator. Clean the interior surfaces of the ice cream chests. Ice cream splatter and residue was observed on the bottom and sides of the unit.
