(A) Ceasing Operations and Reporting (Pf)
There is water in the basement and the owner is not positive of where it is coming from but at the onset of the inspection the basement dough area was still in use. Train employees to properly respond to emergency situations and call the health departemnt for guidance and to report. (The owner was contacted and a plan was put in place; 1) the dough room was closed and all the dough will be purchased from the supplier that already produces the dough for the Somerville location. 2) All the dough made with the unknown water in the basement will be discarded and the new dough will be stored in the exterior walk-in not in the basement walk-in. 3) A environmental company has been called to determine the source of the water and begin the process of repairing the problem. 4) Any food such as the bags of flour in pourous containers will need to be discarded and any food that is in watertight containers need to be sanitized before use.
