The soup from the previous evening was 49F and the roast turkey was 60F. Properly cool items from 140F to 70F in two hours and then from 70F to 41F in an additional four hours. The chicken on the salad bar is 55F. Properly cool items to 41F or below before they are placed on the salad bar to be sure that they cool properly form 140F to 70F in two hours and then from 70F to 41F in an additional four hours.
