8-404.11 Imminent Health Hazard. Gross unsanitary conditions. Rodent infestation. TSOP Issued. PIC is not monitoring cleaning of floors pest control & general facility maintenance. Provide active managerial control as it is defined in the 1999 food code. TSOP ordered by John Meaney on site at the time of inspection.
Why This Matters
EXTREME RISK: Without active management, ALL five CDC risk factors go unchecked. Studies show restaurants without certified managers have 2.5 times more critical violations. Evidence of rodent activity throughout. Observed live rats on glue traps on retail sales floor under carraiges. Observed chewed packages of pet food in rear part of store on display shelving. Observed what appears to be rat droppings on sales floor. Observed rodent dropping in basement with loose mortar. Provide an updated IPM style pest control report upon reinspection stating preventitive measures to address rodent infestation. Clean and sanitize all affected areas. Discard all adulterated packaged foods that have chew marks. Front door to establishment with daylight emitting around permeters of the door. Voids in bricks in basement wall. Seal all potential points of entry in basement. Both basement fire exit doors with daylight emitting at bottom of doors. Seal all outer openings with rodent proof weather stripping with no daylight visible through perameters of doors. Seal all outer openings and potential entry points for pests. Clean and sanitize all areas where droppings are evident as pointed out to the on site PIC.

DISEASE VECTORS: Mice produce 50-75 droppings daily containing Salmonella, Hantavirus. Cockroaches carry 33 types of bacteria, 6 parasitic worms. Flies regurgitate and defecate on food, spreading E. coli, Shigella. One mouse can contaminate 10 times more food than it eats. Pest allergens trigger asthma in 26% of inner-city children.
