(A)(1) Time/Temperature Control for Safety Food Hot and Cold Holding (P)
Multiple items on the buffet table out of temperature. Ensure that all hot foods are held at 135F or above. Ham- 107F Prime rib-119F Salmon- 115F- PIC - Removed and corrected onsite. 02/29/24-Ham-127F Meat-117F Shrimp-121F Salmon-130F- PIC Removed all four items and replaced with all food items above 135F. Ensure that staff is taking temperatures of the food on the buffet table.
Why This Matters
RAPID BACTERIAL GROWTH: At 50°F, E. coli doubles every 30 minutes. At 70°F, it doubles every 20 minutes. After 4 hours above 41°F, bacteria can reach dangerous levels causing severe illness. Common result: 24-72 hours of diarrhea, vomiting, fever, potential hospitalization.
Code Requirements
Immediately discard foods held above 41°F for over 4 hours. Rapidly cool foods above 41°F if less than 2 hours. Check ALL cooler temps every 2 hours with calibrated thermometer. Repair/adjust refrigeration immediately. Never store food in non-refrigerated areas.

The last buffet table on the right hand side is not hot holding the foods to 135F or higher. Repair unit to make sure that the hot food items are being held at the proper temperature of 135F or higher
