As discussed please store raw whole eggs on the bottom shelf and 6 inches off the floor. Walk in had a two piles on eggs. Please move them to the bottom shelf and not above Ready to eat foods.

Why This Matters

DIRECT CONTAMINATION PATH: Raw chicken contains Salmonella (23% of samples) and Campylobacter (71% of samples). One drop of raw chicken juice can contaminate entire shelf below. Results in 1-3 million US illnesses annually.

Evidence of rodents droppings behind equipment in kitchen prep room and along the wall in the basement. Please do a deep cleaning and have pest control come out to do an inspection. May need more inspections to get on top of the issue. Also found a live roach under refrigerators as you go down the stairs. Please address this with Pest control.

Faucet in restroom did not have the hot water working. All other sinks had hot water. PIC has someone coming today to repair or replace the faucet. Until that time please use the cold water in restroom and then use the hand sink in the prep area to wash hands.
