Cooked rice left out at room temperature.Although product was 142.6F there was no means of temperature control.product stored in deep 12" container on front shelving.Rice is usually steamed to upwrds of 199F-200F.There has already been considerable heat loss of product and was just a coincidence of inspection time that product was still above the 140F.PHF can't be stored at room temperature for any length of time.Provide a means of temperature control.Also please think of food protection for samples being given away.Foods stored on soda racks on floor.Remove soda/milk racks and provide proper storage shelving.
