PIC Performing Duties
No 2019 health permit 8-303.20 Conditions for Issuance [revised by 105 CMR 590.012(H)] (1) The board of health may renew a permit for an existing food establishment or may issue a permit to a new owner of an existing food establishment after a properly completed application issubmitted reviewed and approved the fees are paid and an inspection shows that the establishment is in compliance with 105 CMR 590.000. In the case of a renewal application the inspection must have been conducted withinthe time interval established by the board of health pursuant to FC 8-401.10 and 105 CMR 590.013(A). The person incharge must oversee day to day operations to ensure that the establishment operates in compliance with the food code and that immediate corrective action is taken. The employees must be properly trained in food safety and sanitation as it relates to their assigned duties per code by the certified food protection manager
Why This Matters

CONTAMINATION RESERVOIR: Damaged floors harbor bacteria in cracks. Standing water breeds Listeria, Pseudomonas. Broken tiles create pest harborage. Floor contamination spreads via shoes, equipment wheels, and dropped items. CDC found floor drains positive for Listeria in 40% of retail delis.
Code Requirements
Floors must be: Smooth and non-porous in food areas; Properly sloped to drains (1/8 to 1/4 inch per foot); Coving at wall junctures sealed; No cracks, holes, or missing tiles; Grout intact and sealed; Cleaned daily or more frequently; Dry except when cleaning.
