Noted refrigerator in the front area where the contiental breakfast is served Milk 48F/Yogurt 42F stored at 7 am. Removed by the PIC/ PIC stated that the refrigerator is opened many times by the customers so that is why the temeprature is elevated.Monitor the temperature

Cool rapidly using: Shallow pans (2 inches max), Ice baths with stirring, Blast chiller, Cut large items into portions, Add ice as ingredient. NEVER cool at room temp. NEVER stack hot containers. Monitor with thermometer. Document cooling times.
