One staff member was observed preparing chicken on the sanitized side of the dish machine drain board. The dish machine was not in use at the time. The inspector ran the machine and no dish water was escaping from the machine. It would be better to prepare the chicken in another location. Staff were removing pin bones from the salmon on a platform beside a trash bin. It would be better to perform the fish preparation in another location perhaps over the three-basin sink.
