Why This Matters
ILLNESS TRANSMISSION: 70% of foodborne outbreaks traced to poor handwashing. Unwashed hands after restroom carry 10 billion bacteria including E. coli. One contaminated hand can spread bacteria to 7 surfaces in 10 seconds. Causes 48 million illnesses annually.
Code Requirements
Wash hands for 20 seconds minimum with soap and 100°F water: After restroom ALWAYS, Before food prep, After touching face/hair/clothing, Between raw and ready-to-eat foods, After handling garbage, Every 30 minutes during continuous prep, After any contamination risk.

Back up from Dish machine since Sunday and upon arrival Boston drain was there snaking out the grease trap- clearing the blockage- ran the machine its working fine. PIC dumping soiled water outside- Discontinue dumping soiled water outside dump in toilet.

Repair Low temp dishwasher at the bar is leaking- Repair and Discontinue use wash rinse sanitize glasses and equipment in the kitchen warewash machine. I observed Leaking in the kitchen area and Boston Drain was here at the time of reinspection repairing the drain back-up from the grease trap in the kitchen main low temp diswasher- Repaired the kitchen dishwasher its no longer leaking. In basement there is a leak in the pipes
