At this time found staff washing dishes and sanitizer bay was nor set up. I review with staff to fill all three bays and have one for soap another for clean water and last one to sanitize. I requested staff to rewash equipment.

High temperature dishwasher is not working at this time. Someone was out this morning to look at it and will continue to fix. until that time three bay sink is available and quats is used. 1-10-24 At this time PIC is going to use the three bay sink to wash equipment. PIC will need to provide paper work from repair company on what it will cost to get dishwasher working properly. China cups being used are heavy duty and PIC will need to monitor for chipps.
