Non-Food Contact Surfaces Clean
Clean the tops of the bulk storage containers within the walk-in to remove the food soil. The containers were not heavily soiled. However food debris should be promptly wiped and cleaned from the exterior. The drying rack in the walk-in should be cleaned to remove the rust build-up that is accumulating on the shelving beneath the ducks. The ducks have no contact with the shelving. Metal sheet pans prevent direct contact. However the curing agents (vinegar and salt) are likely contributing to the rust build-up.

INDIRECT CONTAMINATION: Dirty surfaces attract pests, harbor bacteria, and contaminate via contact or air movement. Dust from dirty shelves contains allergens affecting 32 million Americans. Grease accumulation creates slip hazards causing 25% of restaurant injuries.
