Observed an employee washing rice in the middle compartment of the three compartment sink. Per the PIC there is no space to install a prep sink. Provide a letter from BU stating that a prep sink cannot be installed per our conversation regarding the plumbing and develop written procedures on using the middle compartment of the three compartment sink as a prep sink.
