Cooked chicken from the previous night (as stated by management) inside of the 2 door cooler with an elevated temperature of 57F. Disocntinue amd ensure proper cooling methods are oin place and all staff have been properly trained. Cooked chicken with the elevated temperature was voluntarily discarded at the time of the inspection. All other foods inside of teh unit were at below 41F.

TOXIN FORMATION: Clostridium perfringens spores survive cooking and germinate during slow cooling. Produce toxin that causes violent illness. Responsible for 1 million illnesses annually. Large batches can take 24+ hours to cool unsafely.
