Observed food employee saute peppers and onions and place into large deep plastic container and place in walkin to cool. Increase surface area for product to cool properly from 140F to 41F or below within 6 hours. Cooked pre portioned chicken wrapped in impermeable bags with temperature of 46F. Ensure chicken is properly cooled to 41F or below before pre portioning in insulated plastic bags.
