Improper Maintenance of Walls/Ceilings

Hood vent company is not using the right slicker. Verify that the company is approved by the Boston fire department www.cityofboston.gov/fire The vent filters are in the hood horizontal. Arrange the filters properly. The vent hood is soiled with grease. Clean to remove. Ceiling tiles are stained. Repair or replace.

Why This Matters

OVERHEAD CONTAMINATION: Peeling paint and debris fall into food. Condensation on ceilings drips bacteria onto prep surfaces. Studies found ceiling tiles harbor Bacillus cereus spores. Restaurant ceiling collapse contaminated food service for 200 guests.
