45 Doz eggs stored at room temperature (74F). Must be store at or below 45F. Eggs have been discarded. PIC stated that eggs delivered yesterday.

RAPID BACTERIAL GROWTH: At 50°F, E. coli doubles every 30 minutes. At 70°F, it doubles every 20 minutes. After 4 hours above 41°F, bacteria can reach dangerous levels causing severe illness. Common result: 24-72 hours of diarrhea, vomiting, fever, potential hospitalization.
Code Requirements
Immediately discard foods held above 41°F for over 4 hours. Rapidly cool foods above 41°F if less than 2 hours. Check ALL cooler temps every 2 hours with calibrated thermometer. Repair/adjust refrigeration immediately. Never store food in non-refrigerated areas.

At this time found three refrigerators not working. PIC has food stored in two small room style refrigerators and a commercial Pepsi refrigerator. PIC will need to provide proper working refrigeration for food in location. NS7 approved commercial grade equipment. 5-19-22 PIC has repaired one of the refrigeration units. He stated that he is working on getting the others fixed.

Evidence of rodent dropings behind equipment. Clean to remove. One roach was seen also. Have pest control do an inspection and location will need to clean. 5-16-22 PIC has cleaned the floor but is waiting for pest control company to do inspection. He stated that they are coming in this week. At re-inspection provide pest control report.

PIC will need to provide a certificate for some that works at this location or paper work that some one is signed up for a class and its paid for. 5-16-22 PIC stated that he was signed up for a cleaa on 5-17-22 but his wife has Covid and was told not to go to the cleaa. At re-inspection PIC will need to provide a paid receipt with a date when you will be taken the class.
