Food Protection
There is a two-drawer refrigerator beside the fryer. Although the raw and cooked chicken are stored within plastic containers set within metal pans the raw chicken should be stored beneath the cooked chicken wings to eliminate the risk for cross contamination. A similar situation was observed within the four drawer refrigeration unit located beneath the grill. The shaved steak that is portioned into bags should be stored within the bottom drawer. Salad items should be stored within the top drawer.
