Dishwashng Facilities
The inspection was completed during morning preparation before the restaurant was opened and before the dish machine was utilized. Upon testing the dish machine the chemical test strips indicated that no sanitizer was present. BISD and the chef reason that overnight the sanitizer is siphoned from the machine and back into the 5-gallon bucket of sanitizer. Once primed the dish machine operated properly. The kitchen staff should be taught how to properly prime the dish machine.
