Why This Matters
RAPID BACTERIAL GROWTH: At 50°F, E. coli doubles every 30 minutes. At 70°F, it doubles every 20 minutes. After 4 hours above 41°F, bacteria can reach dangerous levels causing severe illness. Common result: 24-72 hours of diarrhea, vomiting, fever, potential hospitalization.
Code Requirements
Immediately discard foods held above 41°F for over 4 hours. Rapidly cool foods above 41°F if less than 2 hours. Check ALL cooler temps every 2 hours with calibrated thermometer. Repair/adjust refrigeration immediately. Never store food in non-refrigerated areas.

Multiple products in walk-in at 58-62f at time of inspection condemnation done on unsaf foods and denatured with bleach and put in roll away barrels in locked back alley. (ie: Raw Chicken Raw Pork Cut Vegetables fish and tofu). Condemnation paper work to be filled out later and added to report and sent to owner.

1) Food prep being done at front counter hand sink was discussed with office and could be ok'd if curtains are removed but any additional equipment of foods prep will require a dump sink and possible plane review forms will be sent with report. Pictures supplied with report. 2) Signage outside needs to reflect the name of new business fill out Food service form for Health Division to change name back to original until all city paper work has been changed to new establishment name.
