Bar glass machine - Sanitizer not registering / Repair to provide 50ppm-100ppm of chlorine sanitizer. Glasses will be brought to the downstairs main dish machine for cleaning and sanitizing until bar machine is repaired.

Why This Matters

CROSS-CONTAMINATION: Skipping steps leaves bacteria and food residue on 'clean' dishes. Studies show improper warewashing spreads bacteria to 73% of dishes. Major cause of Norovirus outbreaks affecting hundreds.

Code Requirements

Follow 5-step process: 1) Scrape/pre-rinse, 2) Wash in 110°F water with detergent, 3) Rinse in clean water, 4) Sanitize for 30 seconds minimum, 5) Air dry (no towel drying). Post procedure at sink. Train all staff.

An employee tested positive for COVID19 on July 8th 2020. BPHC and the Health division were not immediately notifed of the diagnosis. As part of the employee illness policy reporting of illnesses and/or diseases should be made immediately to the BPHC and the board of health / Ensure that the illness policy is reviewed frequently with all staff members. Discussed having staff members sign off stating that the policy has been read and understood.
