The sandwiches that were just received from their wholesaler and put in the fridge this morning were 50F. They do not take a temperature when they receive the product so it's difficult to know how long the sandwiches are out of temperature. The items were replaced on the boat and they will monitor the temperature of the refrigerator and receiving temperature to be sure the items are in temperature control.

RAPID BACTERIAL GROWTH: At 50°F, E. coli doubles every 30 minutes. At 70°F, it doubles every 20 minutes. After 4 hours above 41°F, bacteria can reach dangerous levels causing severe illness. Common result: 24-72 hours of diarrhea, vomiting, fever, potential hospitalization.
