Chicken fingures 54F Chicken wings 51F rice 49F. All food must be stored at 41F or above 135F. PIC addressed.
Why This Matters
RAPID BACTERIAL GROWTH: At 50°F, E. coli doubles every 30 minutes. At 70°F, it doubles every 20 minutes. After 4 hours above 41°F, bacteria can reach dangerous levels causing severe illness. Common result: 24-72 hours of diarrhea, vomiting, fever, potential hospitalization.
Code Requirements
Immediately discard foods held above 41°F for over 4 hours. Rapidly cool foods above 41°F if less than 2 hours. Check ALL cooler temps every 2 hours with calibrated thermometer. Repair/adjust refrigeration immediately. Never store food in non-refrigerated areas.

Owner was not at location at this time. At re-inspection you will need to have a up to date pest control report and a plan on how to address the issue. PIC will need to review with staff the importance of hand washing between tasks. Holding temperatures will ned to be addressed and discussed with all staff. PIC will be given multiple hands outs to read and review with staff. Mask need to be on at all times. I had to ask for a staff member to keep mask on. Non criminal violation will be issued.

PIC will need to have a pest control report and a plan to address rodent issue in location at time of re-inspection. Old dropping found a shelves in back and by microwave. Clean to remove and monitor.
